Vegetable Chowder

1 Tbsp. canola oil
1/2 cup fresh or frozen corn
1 small onion, diced
2 Tbsp. tamari soy sauce
1 large celery stalk, thinly sliced
1 tsp. Basil
1 large carrot, thinly sliced
1 large bay leaf
1 clove garlic, finely diced
1/2 tsp. sea salt
2 cups water
pinch black pepper
1 med. potato, peeled, diced
2 cups Original Rice Dream
2 ripe tomatoes, chopped

In a 3 quart saucepan, saute onions in oil until translucent. Add celery, carrots, potatoes and garlic; saute for several more minutes. Add water, corn and seasonings; bring to a boil and then reduce heat to a simmer. Cover and cook for 15 minutes. Add tomatoes and simmer for 15 minutes longer. Add Rice Dream and adjust seasonings to taste.

Note:
We used EdenSoy and also added a diced, peeled sweet potato.

Lori's Cream of Potato Soup

2 Tbsp. Canola oil
1/2 tsp. dried cilantro
1 large onion, diced
1/2 tsp. dried dill
2 cups water
1/4 tsp. black pepper
3 med. potatoes, thinly sliced
1 cup Original Rice Dream
1 tsp. dried parsley
1/4 tsp. sea salt

In small skillet, saute onions until they are translucent. In a 3 quart saucepan, bring to a boil water, potatoes, onion,herbs, salt and pepper. Reduce to a low boil and cook about 20 minutes or until potatoes are soft. Whip the soup in a blender until smooth. return to pot, on low heat. Add Rice dream and adjust seasonings to taste.

Note:
I have noticed several veggie soup/chowder recipes talk about blending our puree the soup just as it is finishing. I don't understand this and prefer them chunky.

Dave's Potato Chowder

4 cloves garlic
3 large potatoes, cleaned and diced
1 med. onion
1 Tbsp. canola oil
1 tsp. Italian Seasoning
2 cups frozen corn
1 cup Non-fat Plain Kefir
1/2 cup non-fat sour cream
2 cups veggie soup stock
dash Worcestershire Sauce

In large soup pot, saute garlic and onion until onion begins to brown, add potatoes and soup stock, cook for 15 minutes. Add corn and seasoning, cook for 10 minutes. Add Kefir and sour cream, cook another 15 minutes or so. You might top with shredded cheddar cheese as serving.

Note:
Kefir and sour cream could be replaced with Edensoy or Rice Dream.
