Reasons I'm Vegetarian

When people ask me why I'm vegetarian I give them the easy answer:
I gave up meat for Lent one year and liked it. But there's really more to it than that. The longer I stick with a meat-free diet, the more reasons I see not to go back.

Recently I wrote a research paper for Honors seminar which had to be related to sustainability. The topic I chose was environmental vegetarianism, because it is strongly tied to sustainable eating. I've never posted a paper online before, but I liked this one so much that I think I will. Maybe it will give you a peek into some of the real reasons that I'm vegetarian.
